As the weather turns a little cooler, my thoughts turn towards cooking again. This is one of my very favorite recipes, and I always get rave reviews. This bread is moist and sweet, almost like cake! Good with or without butter, and the recipe makes two loaves.

You will need:

  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 2 cups sugar
  • 1/2 lb (2 sticks) butter, room temp
  • 4 eggs, beaten
  • 6 bananas, mashed
  • 3 tsp vanilla
  • nuts as desired ( I use 1 cup pecan pieces)

Mix first five ingredients together with pastry blender or fork until crumbly. Add beaten eggs, mashed bananas and vanilla. Add nuts as desired. Divide batter between two greased and floured loaf pans and bake @ 350 for about an hour. Check with toothpick in center, sometimes needs an extra five or ten minutes in the oven.

This bread is great for breakfast or brunch, with a salad, or just as a snack. It also makes a great office treat or gift.
