This week's featured listener recipe puts an interesting spin on meatloaf, mashed potatoes and veggies by combining them into one hybrid dish called "meat mountains."

You will need:

  • 2 lbs of ground burger
  • 1 pkg of stove top stuffing
  • 1 egg
  • 2 pkg of gravy mix
  • 5 large potatoes peeled and mashed
  • 1 can of corn (optional)

Mix up your favorite meatloaf recipe. I use stuffing to make mine. Make the big meatballs then make each of the meatballs into meat bowls (see picture 2 in gallery above). Preheat oven to 350 degrees. Add corn or other favorite vegetable (optional). Add mashed potatoes to the center of the meat bowls (see picture 3 in gallery above). Bake for 45 minutes. Remove from oven and pour gravy on each of the Meat Mountains (see picture 1 in gallery above). Serve with a salad biscuits.
