You might have heard Rod and I talking this morning about the expected shortage of vanilla, and the rising cost. Did you know that you can make vanilla extract at home and probably save a bunch of money? Check this out!

 

 

You will need three vanilla beans, one cup vodka and a glass jar with a tight lid. Try a mason or canning jar. Use a sharp knife or scissors to cut the bean lengthwise. Split them in half, leaving an inch at the end so that the bean halves stay connected. Put the vanilla beans in the glass jar and cover completely with vodka. Store in a cool, dark place and give the bottle a good shake every so often for two months or longer. The vanilla extract will last this way for years, and you can continue to top it off with vodka for a never ending supply. Just remember to shake it every so often.

Because I do a lot of baking, vanilla is something that I automatically throw in to the cart when I shop for groceries. That gets expensive, so I am going to give this recipe a try. I hope this can save you some money as well!
