October is many things, but for spinach lovers it is the month to celebrate the power of this green, leafy vegetable that goes great in salads, sandwiches and many other dishes.

Spinach is tasty, loaded with lutein and folic acid and is easy to grow.  I grow spinach at home in containers.  A discarded tub I found while on a run and a large flower pot.  I'm still picking spinach in late October, even after a couple of nights of heavy frost.

If you don't grow your own, spinach is easy to find at local farmers' markets and in most grocery stores.  I prefer the local produce, but in the dead of winter you take what you can find.
