Mary’s Zucchini Casserole — Cars 108 Recipe of the Week

- 4 cups zucchini, cut into small cubes
- 1 medium onion, diced
- 3/4 cup shredded carrots
- 4 tablespoons butter
- 1 pound ground beef
- 1 package Stove Top dressing
- 1 can cream of chicken soup
- 1/2 cup sour cream
Saute the butter and veggies in a fry pan. Brown meat separately. Add soup, sour cream and 1/2 of your stove top dressing to meat. Combine with veggies once sauteed. Stir well – put into sprayed 9×13 pan. Melt 6 tablespoons of butter and mix with remaining stove top. Add to top of casserole – don’t mix in.Bake at 350* for 45 minutes. This recipe makes a lot, so prepare for leftovers! You Can also make ahead of time and freeze.
