  • 4 cups zucchini, cut into small cubes
  • 1 medium onion, diced
  • 3/4 cup shredded carrots
  • 4 tablespoons butter
  • 1 pound ground beef
  • 1 package Stove Top dressing
  • 1 can cream of chicken soup
  • 1/2 cup sour cream

Saute the butter and veggies in a fry pan. Brown meat separately. Add soup, sour cream and 1/2 of your stove top dressing to meat. Combine with veggies once sauteed. Stir well - put into sprayed 9x13 pan. Melt 6 tablespoons of butter and mix with remaining stove top. Add to top of casserole - don't mix in.Bake at 350* for 45 minutes. This recipe makes a lot, so prepare for leftovers! You Can also make ahead of time and freeze.
