I love meals that you can make in one pan, so you don't have to dirty a ton of dishes. I love them even more when they are quick, and include ingredients that I usually have on hand. I love this spicy sausage recipe because it is something different, sometimes I get tired of chicken, pork, and the meals I make regularly. Get the recipe here!

You will need:

  • 1 tablespoon extra virgin olive oil
  • 1 14oz package smoked sausage (I use turkey sausage)
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 10oz can Ro-Tel tomatoes and Green Chilies
  • 1/2 cup heavy cream (I use half and half)
  • 8oz uncooked penne pasta
  • 1 teaspoon black pepper
  • 2 cups shredded cheese (I use Monterey Jack)

You start by heating the oil in an oven safe skillet. I used my stainless steel skillet and just covered the handle with aluminum foil so I could put it under the broiler later. Once the oil is hot, add the sausage and onion. Cook until the sausage is browned, it will take about 4 minutes, then add the garlic. Once you let the garlic cook out for about 30 seconds, add the Ro-Tel, heavy cream, pasta and pepper and stir will. Bring everything to a boil, cover the pan, reduce the heat to simmer and cook until the pasta is tender. This should take about 15 min.  Preheat the broiler and stir the mixture a couple times while it is simmering. Once the pasta is tender, remove the pan from the heat and stir in half the cheese. Cover with the other half of the cheese. This is where you want to make sure your pan is oven safe, if you are using stainless steel like i do, just cover the handles with aluminum foil. Stick the pan in the broiler until the cheese is melted, it takes about 3 minutes. Let it sit for a few minutes before you serve, and enjoy the spicy deliciousness!
